Homemade Dilly Mayonaise

We are slowly moving our family to a more homemade pantry.  This includes making our own condiments.   We didn't want to waste what we had already bought, so as we finish up the store bought brands, we will make our own.  The first to go was the mayonnaise.  




Dilly Mayonaise

1 whole egg
1 egg yolks
1 T fresh lemon juice
1 tsp mustard
1 tsp balsamic vinegar
2 tsp coconut sugar
1 tsp sea salt
1 c expeller pressed sesame oil or grapeseed oil (I used Wildtree Garlic Grapeseed Oil.)
1 Tbsp fresh dill (maybe a bit more)
4 Tbsp sour cream or greek yogurt (to taste)



1. Combine everything except the oil and sour cream and mix in a blender or with a hand mixer.  
2. Mix until thickens up.
3. Slowly add in oil. 
4. Add in sour cream 1 Tbsp at a time to taste.


This batch of mayo tasted pretty garlicky, which I like a lot. I

might use plain grapeseed oil next time and press in some 
fresh garlic cloves. Yum!








We used the mayo on some mushroom burger sliders.  Delicious!!
