This year for Christmas my mom bought me a couple of wonderful canning books. One was Saving the Season by Kevin West. In it is a recipe for Fine-Shred Lime or Lemon Marmalade. With all the Meyer Lemons on my dad's tree this year, this was an easy choice. The recipe does call for sour lemons, but the Meyer Lemons add a sweet flavor to the marmalade. It is a three day process, but the steps each day are very manageable.

There is no way for me to adequately describe the smell of all these Meyer Lemons cut up. "Amazing" is a start.
Slice off the lemon peel |
Slice Lemons in rounds, removing seeds Cover with water and soak overnight |
Cover with water, gently boil, then soak overnight |
Add sugar and bring to a boil Skim once |

So amazing. I highly recommend the book, Saving the Season. I've seen a lot of recipes that I'll make throughout the year.
