Making Whoopie Pies


Tee-Hee.  Making Whoopie Pies.  It's the little things that matter.  The little belly laughs.  You know?  Anyway, this holiday season, I made these yummy yummy Whoopie Pies.  They were so moist and delicious!  

I tried out a few different ways to make the cream filling, but the Marshmallow Creme was the one that won out with the family. 

Yes, I know.  I know.  I'll keep trying out other cream fillings until I get it the way I like it.

Some of the recipes I tried wouldn't fluff up and just turned into a slippery-sweet white mess that dripped EVERYWHERE.  My husband didn't seem to mind too much.  




Making Whoopie Pies

Ingredients
1/2 c butter (1 stick) softened
1 c brown sugar
1 egg
1 1/2 tsp vanilla
2 c flour
1/3 c cocoa 
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 c milk (whole)
Marshmallow Creme ;)


1.  Preheat oven to 350 degrees
2.  Cream butter and sugar
3.  Add egg and vanilla
4.  Mix dry ingredients separately
5.  Add dry ingredients in slowly, alternating with the milk
6.  Scoop mixture onto baking sheet using about 1/4 cup per cake
7.  Bake 15 minutes
8.  Allow to cool and fill with Marshmallow Creme
