Funny story...
My eldest son LOVES turkey meatballs, but laziness prevailed when I was working full time. So, I usually bought the pre-made frozen turkey meatballs and heated them up. Anyway, one time when he was sick I decided to make him gourmet meatballs with homemade breadcrumbs and fresh mozzarella. They were to die for, or at least I thought so. He HATED them....They took me over an hour to make!!! Yeah, funny, right?
Now that I'm working from home, my goal is to create healthy home cooked food for my family. But over an hour for meatballs that only I love, that's for the birds. So I've adapted a recipe to make healthy turkey meatballs that are easy to make and freeze well. (This way I can double the recipe!) I'm able to sneak in healthy veggies and herbs as well, and the best part is, he loves them! I often pack them in his lunch.
Ground Turkey with all the hidden veggies!
Roll out
Pan cook
Delicious meatballs
Turkey Meatballs
1 lb ground turkey
4-6 minced garlic cloves
1/2 medium onion finely chopped
3/4 c finely chopped kale or chard
1/4 c finely chopped parsley
1/2 tsp salt
1/2 tsp pepper
1/2 tsp oregano or italian herbs mix
1 egg beaten
1/2 c breadcrumbs
1. Mix all the ingredients in a mixing bowl
2. Roll into balls 1-1/2 inches in diameter
3. Coat a pan with olive oil or grape seed oil
4. Cook through
At this point, if I've made a big batch, I'll cool them and then place into a freezer bag.
