First, allow me to say that I solemnly vow to take more pictures of my canning process.
But, just take a look at theses lovely lemons! They smell mouthwateringly divine!!!
My dad has a good friend with a Meyer lemon tree, and he brought me bunches and bunches. I actually have a big bag in the fridge right now, just waiting to be devoured.
I looked all around for recipes for canning lemons, and I found one that sounded intriguing. And I chose, drumroll please...
Meyer Lemon Vanilla Bean Marmalade
This was a learning process for me. I've never used vanilla except in extract form, but I went out and found vanilla beans.
I got the part where I had to slice the vanilla bean down the middle, and I thought I understood what it meant to scrape out the seeds. I was expecting to see a few seeds that I would probably have to crush. Boy, was I wrong. Apparently, vanilla beans are filled with teensy tiny seeds.

Once I looked this up on the handy-dandy internet, I smacked my forehead and went along with the recipe.
I did end up processing the jars though for 15-20 minutes, and the results were AMAZING!!
Now, I have to get chopping so that I can make enough to last until next year.
