Best Ever Buttery Baked Butternut Squash



Yippee!  I've done it!  Finally, I've remembered to take pictures of all the steps in a recipe.  I've been slowly reposting some of my old "Two In The Nest" recipes, and I've noticed a lot of missed steps and information that I have to go fill back in.  (I know, I ended with a preposition...)  But tonight I've managed to take pictures of all the steps.  So, without further chatter, here's my Best Ever Buttery Baked Butternut Squash:

Ingredients
2 butternut squash
butter
brown sugar
salt
pepper

Directions
1.  Preheat the oven to 400 degrees
2.  Slice the butternut squash lengthwise
3.  Clean out the seeds and pulp
4.  Place butter in the hollow and on the flesh (I use about 2 Tbsp per slice....Is that a lot? ;D )
5.  Sprinkle the halves with brown sugar (I use about 1 Tbsp per slice.)
6.  Season with a little salt and pepper
7.  Place in preheated oven for an hour.
8.  Check with a fork.  It should go in and out with ease.


I usually mash a bit and top with a little dollop of butter.

  2. Oh yippee! My first comment! I hope you enjoy it! We loooove butternut squash around here. I made a yummy sauté with adzuki beans and kale and cinnamon that I'm working on writing up. It was delish!

  4. Let me know how you like it! Some people skip the sugar, but the boys tend to eat it a bit better with a pinch of sugar. ;)
